I LOVE Valentine’s Day! That’s right, I’m a sap, a schmuck, a tool of the card and candy company’s marketing campaigns, what have you. Yes, I almost spent $15 on a half dozen chocolate-dipped strawberries at the grocery store last night (they weren’t even close to being vegan so I was able to control myself). Whatever. And I managed to have quite an enjoyable Valentine’s day, in spite of a rather disagreeable boyfriend. But as much as he bitches and moans, I still think he secretly adores the schmaltzy cards and chocolates he gets from me each year.
One of the advantages of living where you work is the ability to duck in and out of the house whenever you like. I managed to find the time to whip us up a vegan treat in celebration of the day: a super simple chocolate cake. It turned out great and I had all of the ingredients on hand.
Could it be any cuter?!
We bought some simulated ground beef called “Smart Ground” at Whole Foods a couple of weeks ago that I’ve been wanting to give a try, so we had vegan pizza for our cozy Valentine’s dinner at home. One with the “beef,” green pepper, onions and mushrooms and the other was a spinach pizza with a soy milk based béchamel. I was short on bread flour so the crust ended up being part whole wheat. It seems like the dough is actually a lot more agreeable with the little bit of wheat flour added. Either way, it turned out delicious as usual.
Now we’re just settling down to watch some TV. Watching a little gem called “Sex Robot” right now. It’s on the Discovery Fit & Health channel, so it’s not pervy. ‘Night!
